The Perfect Plum Chutney

Plums are in season and the other day I got 2 small cases of the beauties!Apart from eating them to make your tongue red and make faces in the mirror,this is another great idea.This chutney goes well with almost anything – Bread,Dosas,Paranthas,Rotis,and mainly eaten from the fingertips!Check out this uber-delicious delight!

Preparation Time – 40-45 Minutes

Makes – 1 Standard Jar

500 gms plums

250-300 gms sugar

2 tbsp Balsamic Vinegar

4-5 whole Cloves

2 sticks Cinnamon/2 tsp fine Cinnamon Powder

2 tsp salt

2 tbsp water

METHOD

Slice the Plums into wedges or dices as per your preference.Put the plums in a non stick saucepan with the water,sugar,salt,cloves and cinnamon.Start cooking on a very low heat.In about 10 minutes time you will find the Plums giving off their own juices and combining with the salt and sugar.Cook till a runny,chutney consistency is reached.The test is when the chutney coats the back of a spoon,you should be able to make a clean line on the back of the spoon.

Add the Vinegar to the chutney and mix well.Leave to cool till room temperature.Fill in clean Jars and close securely.

NOTE – Always use clean spoons while handling Chutneys and Pickles and keep them closed all the while!
