Tutti Frutti Bread/Fruit Bread
This recipe has wonderful nostalgic days when I was a small child and this bread was bought as it was sweet and fruity!I remember eating the tutti fruity and throwing away the bread much to my mother’s dismay but this was a favourite of mine all throughout!This bread is not available these days so I planned to make it to revisit nostalgia!
Preparation Time : 2 hours
Baking Time : 35 minutes
Makes : 1 standard loaf!

INGREDIENTS

3 cups all purpose flour/plain flour/maida

4 tbsp powdered sugar

1 tsp salt

1/2 cup soft butter/refined Oil/margarine

1/2 cup milk powder

1 tbsp active dried yeast/instant yeast

1/4 cup lukewarm water

1 1/2 cups Tutti Frutti

2 tbsp milk for brushing on top

2 tbsp butter

METHOD

Add the yeast(if using active dried) into the warm water and add 1 tbsp sugar.Keep aside till the yeast is activated and foams well.If using instant yeast then add directly to the flour after sifting and add the water later.

Sift flour,salt,milk powder and sugar in a large bowl.

For those using Instant yeast :

Now add instant yeast and mix well.Add the water and start mixing adding more water if needed into a soft dough.

For those using active dried yeast :

Make a well in the sifted flour and add the proved yeast.Mix well and add more water to make a soft dough.

Next steps :

Cover with clingfilm and rest for 30 minutes or till double in volume.

Flour the kitchen countertop and take out the dough on it.Flatten the dough with your fingers and put the butter in between.if using oil pour it over the dough kneading all the while.Knead for 10 – 12 minutes till the dough no longer sticks and is nice and elastic.

Oil the bowl and put the dough back into it.Cover with clingfilm and leave to prove for 40 minutes.Prepare a loaf pan.

Spread 1/2 cup tutti frutti and 2 tbsp flour on the kitchen countertop.Punch down the dough and place over the Tutti Frutti mix.Flatten it with your fingers and add the rest of the Tutti Frutti on top.Knead the Tutti Frutti into the dough and shape into a loaf.Place the loaf into the prepared pan and cover with clingfilm.Rest for 40 minutes till double in volume and the dough comes to the top of the pan.

15 minutes prior preheat ove to 180°C.Brush the top of the bread gently with milk.

Bake the bread for around 35 – 40 minutes till the top is a beautiful brown.A toothpick inserted in the bread comes out clean and the bread sounds hollow when tapped.Brush the top of the bread with melted butter.

Cool the bread inside the pan for 20 minutes then on a wire rack for 5 – 6 hours till it comes to room temperature.

Cut into slices and serve preferably warm with butter and cups of tea or coffee!
