Tutti Frutti Bundt Cake (Fruit Cake with homemade Tutti Frutti)

Now we are going to utilise the Tutti Frutti we made in the previous post in a beautiful cake which will be simply delicious and too good to resist!You will remember your mom’s cakes and childhood memories after having a bite of this easy to make and sensational cake.It defines the saying :

“Simplicity is the ultimate sophistication!”

Let’s make the cake now!

NOTE : In the blazing Indian summers its advisable to refrigerate the cake.Whenever you need to have the cake take it out 30 minutes before or heat it in the microwave for a minute.Keeping the cake at room temperature can make it stale very fast making it susceptible to moulds.

Preparation Time : 2 hours

Makes : 1 Bundt Cake/15 servings

INGREDIENTS

2 cups flour (maida)

2 cups powdered sugar

6 eggs

2 tsp baking powder

3 tsp vanilla essence

1 cup Tutti Frutti (see recipe above)

1/2 cup melted butter/oil (use oils like Canola,sunflower,rice bran or vegetable oil)

METHOD

Preheat oven to 180°C.

Prepare a Bundt pan by spraying it with baking spray/greasing with butter/oil and lining with parchment paper.You can use any other cake pan if you like.

Sift flour and baking powder in a bowl.Keep aside.Mix 1/4 cup of this prepared flour with the Tutti Frutti in a small bowl and keep aside till required.

In a large bowl combine butter/oil and sugar and combine with an electric whisk till creamy.

Add eggs one at a time beating after each addition.Add the vanilla essence and beat for 1 – 2 minutes.

Add the sifted flour 2 tbsp at a time alternatively with 1 tbsp of Tutti Frutti-flour mix to the egg mixture.Fold with a spatula in an up and down motion till all the flour and Tutti Frutti are used up.Give one last mix.

Pour the batter into the prepared cake pan and tap on a table gently to remove air bubbles.Lower heat to 150°C and bake in a preheated oven for 1 hour till the cake has risen and a skewer inserted inside comes out clean.

After baking the cake..

Take the cake out and cool in the pan for 5 – 10 minutes.Take out and cool to room temperature.Cut into slices and serve with hot tea or coffee.
