People who see international blogs and food habits are aware of Potatoes being roasted and had as accompaniments with Roast Turkey for Thanksgiving and Christmas or Easter or for formal and family dinners.I am presenting the Indianised version of the delicious recipe with the common ingredients we get here.This recipe is for those people like me who love to try out something delightfully different and tasty.

BetterButter the popular recipe platform teamed up with Sprig to start a Contest which included registering with them,getting a complementary sample of their tasty spice blends and concocting recipes from the same.They have 4 wonderful spice blends :
- Genoa: Italian Spice Blend
- Malacca: Oriental Spice Blend
- Syracuse: American Spice Blend
- Tangier: Mediterranean Spice Blend
I got their Syracuse: American Spice Blend and proceeded to make this exceptionally delicious Oven Roasted Potatoes.

As I hovered over the Potatoes roasting in the Oven,I remembered my stint in Canada when during Christmas time there was exactly the same aroma emanating from people’s homes on Christmas Eve!I knew I was bang on the target and considered myself lucky to create something which had memories galore in my mind!
I started loving Sprig even more and planned to order a refill of this wonderful spice blend as well as samples of the other three as well.
So coming back to this ethereal recipe,here is a list of ingredients which have been substituted :
- Fat – I have used a combination of Butter and Olive Oil.If I used only Butter I would end up burning it so I need an Oil which would save this.The best option is Duck or Goose Fat which is used in the Americas.If you can get hold of it you are lucky else proceed with this combination.
- Herbs – The original recipe uses versatile herbs like Rosemary,Thyme,Oregano,Cilantro,Parsley and sometimes torn strips of Basil too.Here we get Coriander Leaves which have a taste unique in themselves which when used give out their flavour to the Potatoes making them uber delicious!
Preparation Time : 2 hours
Makes : 3 – 4 servings
INGREDIENTS
12 medium Potatoes
1 1/2 tbsp salt
2 tbsp Sprig Syracuse American Spice Blend
3 tbsp butter
4 tbsp Olive Oil
3 tbsp finely chopped Coriander Leaves
METHOD
Wash,peel and quarter the Potatoes.Keep them soaked in water till needed.
Put the Potatoes in a saucepan and add water to cover them.Let the water come to a rolling boil and simmer for 3 minutes.
Meanwhile heat oven to 210°C.
In a roasting pan add the melted butter and Olive oil and spread evenly to cover the whole pan with a silicone brush.Put the pan in the oven for 5 minutes to heat the fat.
Drain the partially cooked Potatoes in a colander.Now ladle the Potatoes into the prepared pan .Toss the Potatoes so as to amalgamate the fat on each of them.
Sprinkle the remaining 1/2 tbsp salt on them.Sprinkle Sprig American Spice Blend evenly on the Potatoes.Now lastly sprinkle the finely chopped Coriander Leaves and mix well.
Return to the oven and start roasting. It would take around 1.5 hours for the Potatoes to get roasted to a lovely golden brown.Keep checking and tossing the Potatoes in between.
After 1.5 hours the Potatoes would be perfectly roasted.
Serve as a snack or as a dinner accompaniment.
