Pineapple Yogurt Fool

The concept of “Fool” as a food would be amazing to people who have not heard about the dessert!It is a classic British dessert in which stewed and pureed fruit is blended with a cooked custard and chilled till serving time!The custard packs in bountiful calories but it is a great dessert to have!

However I am presenting a healthier version of this delicious dessert in which the chief ingredient is Yogurt.So the dessert is healthier,has less calories and can be made in a jiffy!I have taken this from one of Sanjeev Kapoor’s recipes but moulded it according to my convenience!

NOTE – All the ingredients have to be prepared before hand to make this dessert!However if you want to chill it further the chilling time would be included here!The 2 minutes is without the chilling time!

Preparation Time : 2 minutes

Makes : 2 servings

INGREDIENTS

1 cup hung Yogurt (chakka dahi) – refrigerated for 2 – 3 hours

1/2 cup preserved Pineapple chunks – canned/preserved – refrigerated for 2 – 3 hours

2 tbsp powdered sugar (optional)

2 tbsp Pineapple syrup (from the canned Pineapple)

1 sprig of Mint

1 tsp Cardamom Powder (elaichi) – optional

METHOD

In a chutney blender add the hung yogurt,sugar and cardamom powder (if using) and Pineapple chunks.Reserve 2 – 3 for garnishing.

Blend to a smooth cream.This is the Fool!

Chop the reserved Pineapple into bits.

Divide the fool between 2 attractive serving glasses.Spoon 1 tbsp into each glass followed by 2 – 3 bits of Pineapple.Spoon the remaining on top and decorate with a Mint leaf and Pineapple bits.

Serve immediately.
