Roasted Potatoes with Garlic Chives

The market is flooded with spring produce and one of them is a favourite of mine – Garlic Chives.Of all the alliums in existence I love Garlic the most.A few may disagree with me as they may not like the potent smell but for me Garlic is a must for almost everything from snacks to main courses.Garlic breads,garlic butter,chutney,Daal,subzi and rasse walas..Garlic takes centre stage.

I love the feel of fresh Garlic Chives – the beautiful greens boasting of taste and bursting with health,the white Garlic pods under them promising better health if taken regularly and the silk tassels underneath which look like respectful,elderly hair of your grandma which is treasured and which we never want to let go!

The greens have to be separated from the pods which in turn are separated from the white tassels.These tassels have to be discarded.

Fresh Garlic Chives…

The Chives after chopping…

Preparation Time : 1 hour

Marination Time : 20 minutes

Makes : 5 servings

INGREDIENTS

1/2 kg medium Potatoes – quartered/20 – 25 baby Potatoes or you can mix both like I did

2 tsp salt

3 tbsp finely chopped Garlic Chives

Water as required

For the Marinade :

2 tbsp butter

1 tbsp Oil

1 tsp salt

2 tsp white pepper powder

2 – 3 drops red edible food colour (optional)

1 tbsp freshly prepared Ginger-Garlic-Chilli Paste

1 tbsp Lemon Juice

The Spice Mix :

1 tsp red chilli powder

1 tsp coriander powder

1 tsp cumin powder

1/2 tsp Garam Masala

1/2 tsp Amchur

METHOD 

Mix all the ingredients for the marinade and keep aside.

Mix all the ingredients for the spice mix and keep aside.

Prick the Potatoes with a fork and add sufficient water and salt to cover them in a saucepan.Boil on medium heat for 10 minutes till they are partly cooked.They should neither be too firm or too soft.Drain the Potatoes.

Take the roasting tray and spread the Potatoes evenly on it.Pour the marinade on top of the prepared potatoes and toss with a spatula till evenly coated.Keep aside for 20 minutes for the marinade to coat and absorb in the Potatoes evenly.

Preheat oven to 230°C.Put the tray into the oven and roast for 35 – 40 minutes turning the tray between intervals of 10 minutes till the Potatoes are cooked and soft while the skin and exterior is crisp.

Take out and sprinkle the spice mix and Garlic Chives evenly over the Potatoes and put back into the oven for 10 – 15 minutes more.

Switch off the oven and let the tray remain inside for 10 – 15 minutes more.Take out and rest for sometime to cool off the Potatoes a little.Serve with dip or bread.
