Well..Holi is over and so is the calorific indulgence..:)so here is a recipe which will not give you calories..yet be light on the stomach and digestive as well.This recipe is made in half an hour with spectacular results!For getting the best results of a non-calorific diet,do not pair it with coconut chutney..instead use a substitute like coriander or chili chutneys or even a pickle.This idli is made using Eno fruit salt which is very effective in turning out soft and lovely Idlis. Team it with a coconut-free sambar or even a dal. Its yummy!
Preparation Time – 30 minutes
Makes – 10-12 Idlis
Ingredients.
1 cup semolina(suji/rava)
1/4 cup curd(yogurt)
Salt to Taste
3/4 tsp Eno Fruit salt
1 cup water
For the Tadka:
2 tsp oil
1 tsp mustard seeds(rai)
1 tsp cumin seeds(jeera)
1 tsp asafoetida
1 tsp urad dal(white)
1 green chili – finely minced
5-6 curry leaves – finely chopped
Method
Mix the semolina with water and curd.Add salt.Keep aside for 10 minutes.
In a small tadka kadai heat oil.Add the mustard seeds,cumin seeds,asafoetida.When the mustard seeds pop,add urad dal.Fry till dal turns pink.Then add the chilies and curry leaves and fry for a minute more.Keep aside.Add this tadka to the semolina batter and then add Eno Fruit Salt.
IMPORTANT – When you add the fruit salt IMMEDIATELY make the Idlis.Otherwise the Idlis would not turn out as soft as desired.
Grease a set of idli plates with a little sesame/refined oil.Pour the batter into the idli plates.Steam the idlis for 10-15 minutes.Cool for 5 minutes and remove onto a plate.Serve with any chutney or pickle of your choice!
