Stuffed Garlic Bread (Domino’s Style)

Domino’s Pizza has created waves with its range of Pizzas and sides!However more than the Pizza I looked forward to having their stuffed Garlic Bread which I sometimes ordered a pack of 2!The result was that almost always 60% of Pizza would be wrapped in foil and frozen for future reheating while we would make a meal out of the sides!This is where I thought I would try a hand at making the absolutely delicious stuffed Garlic breadsticks myself!

I proudly declare that this recipe was mastered at the first attempt and I swore on the very first breadstick never to buy them again!

Preparation Time : 2 hours

Makes : 2 half moon shaped breads (6 – 7 breadsticks per bread)

INGREDIENTS

For the bread :

2 cups plus 1/2 cup extra plain flour/all purpose flour/maida

Water to mix

1 tbsp instant yeast/1 1/2 tbsp active dried yeast

1 tbsp powdered sugar

2 tsp salt

2 tbsp Oregano mix

2 – 3 tbsp Olive Oil

For brushing on top :

2 tbsp Garlic Butter

OR

2 – 3 cloves Garlic crushed

2 tbsp melted butter

For the filling :

1/2 cup sweet corn kernels

1/2 cup chopped peppers – green Capsicums,Red and Yellow peppers

2 tbsp Mushrooms – chopped (optional)

3 cups Mozzarella Cheese (grated)

1 Gherkin – chopped fine (optional)

2 tbsp Olives – halved (optional)

METHOD

Prepare the Garlic Butter :

Mix the fresh Garlic paste and melted butter in a bowl till amalgamated.Keep aside.

Prepare the dough :

If using active dried yeast,mix it with 1/2 cup lukewarm milk and 1 tbsp sugar.Keep aside till foamy.

Mix all the dry ingredients – flour,yeast,sugar,salt and 1 tbsp Oregano mix (add instant yeast if using at this stage and knead with water directly) in a large bowl.If using active dried yeast, make a well in the centre of the dry ingredients.Mix in the foamy yeast and add sufficient water to knead into a soft and sticky dough.Sprinkle 1 tbsp flour on your kitchen countertop and take out the dough onto it.

Start kneading using your palms and knuckles and knead for 10 minutes till the dough becomes a little sticky again.Do not add dry flour here as it will harden the bread.Mix the oil into the flour and knead again.This time it will leave your hands and become smooth and elastic.Oil a bowl and put the dough into it.Cover with clingfilm and leave to rise for 35 – 40 minutes or till doubled in volume.

Prepare the filling :

Mix all the ingredients for filling in a bowl and divide into 2 equal parts.Keep aside till needed.

Make the breads :

Divide the dough into 2 equal parts.Sprinkle some flour on your countertop and roll one of the parts into a large circle.Put one portion of the filling on the lower half of the circle and cover with the upper half to form a half moon shaped bread.Repeat with the other half of the dough and use the other portion of filling to make 2 half moon shaped breads.Keep the breads on a greased baking sheet and cover with clingfilm.Let the breads rise for 30 – 35 minutes.

Bake the breads :

Preheat the oven to 180°C.

Using a pizza wheel cutter,divide the breads into 6 – 7 breadsticks without separating them from the base.Sprinkle the remaining 1 tbsp Oregano seasoning on top of the breads.

Before baking the breads….

Brush both the breads with the prepared Garlic butter.Bake for 10 – 12 minutes till the breads are baked to a lovely golden brown.

Take out and brush with the Garlic butter again.Serve with a dip of your choice!

Served with homemade Garlic Dip…
