Sooji Ka Halwa

There are numerous desserts which go in with Semolina – also called Sooji or Rava in the Indian Sub-Continent –

1. Sooji Ka Halwa – Made in North India

2 Rava Kesari – Made in South India

3. Rava Sheera – Made in Maharashtra and parts of Karnataka

There is a whole lot of difference in these terms ,especially when it comes to their cooking.The Rava Kesari has a richer taste as its made in milk,wheras the Halwa has a sugar-caramel texture as its made in water.The Sheera has a mix of both milk and water and tastes different!Each of these Desserts have different tastes but they are Desserts altogether and a delicious ones.So check this one out….

Preparation Time – 20 minutes

Makes – 3-4 Servings

INGREDIENTS

1 cup Semolina/Rava/Sooji

1 1/2 cups sugar/Sugar Free

1/4 cup ghee/Refined Oil

2 cups water

1 tsp Cardamom Powder(optional)

METHOD

In a non-stick pan,heat ghee and add Semolina.Roast on low heat till a nice aroma emanates and the Semolina is golden brown in color.Add the sugar and mix well for the sugar/Sugar Free to amalgamate into the Semolina.Now the sugar starts to caramelise.Add the water very gently now and be careful here as there would be a reaction when the cool water touches the hot Semolina-sugar mix.Stir well and keep stirring for the mixture to absorb the water properly and get cooked and soft.Add the Cardamom Powder if using.Stir till the mixture comes away from the pan into a mass.Take off heat and let it cool.Serve with hot tea.
