METHOD

Slice the Plums into wedges or dices as per your preference.Put the plums in a non stick saucepan with the water, sugar, salt, cloves and cinnamon.Start cooking on a very low heat.In about 10 minutes time you will find the Plums giving off their own juices and combining with the salt and sugar.Cook till a runny, chutney consistency is reached. The test is when the chutney coats the back of a spoon, you should be able to make a clean line on the back of the spoon.

Add the Vinegar to the chutney and mix well.Leave to cool till room temperature.Fill in clean Jars and close securely.

NOTE – Always use clean spoons while handling Chutneys and Pickles and keep them closed all the while!
