Tomato and Raisin Chutney

This wonderful Chutney will immediately become your favorite as it is with me.Simple to make a delicious in taste it pairs with almost all breads and is wonderful on fingers too!

Preparation Time – 35-40 minutes

Makes – 1 small Jar

Ingredients

500 gms tomatoes

250 gms sugar

100 gms raisins

150 ml balsamic/white wine vinegar

1 tbsp red chili powder

1 tbsp garlic – chopped into pieces

1 tbsp ginger – chopped into pieces or julienned

1 1/2 tsp salt

Method

Dice tomatoes.In a non stick pan add tomatoes and all other ingredients.Now put the pan on lowest heat and start boiling.The tomatoes will give out their juices and cook slowly absorbing the flavor of all the ingredients.Cook for around 35-40 minutes till a the mixture coats the back of a spoon and leaves a line.

Cooking the Chutney..

Take off heat and cover the pan with a clean cloth.Cool to room temperature and fill in clean glass jars.
